Coconut Macaroons

1/3 c. butter, softened
3 oz. cream cheese
1 egg yolk
2 tsp orange juice
1 tsp almond extract
1 1/4 c. all purpose flour
2 tsp baking powder
14 tsp salt
3 3/4 c. coconut

Preheat oven to 350°F.
In a mixer, beat butter, cream cheese, and sugar until well blended.
Add egg yolk, orange juice, and almond extract, mix until combined.
Stir together flour, baking powder, and salt.
Add dry ingredients to mixing bowl and combine.
Stir in coconut.
Drop by spoon onto greased or lined cookie sheet.
Bake for 10-15 minutes.
Yield: 2-3 dozen, depending how large/small.

*I used a #40 scoop, made 35 cookies, baked for 13 minutes exactly.
